October Freezer Cooking: The Nesting Edition

Ok with my due date rapidly approaching (November 5th!) I thought it would be an excellent idea to restock the deep freeze because, to be honest, I don't want to cook much come November! Here is what I've accomplished so far:

  • Wild Rice Hotdish x2
  • Monterey Jack Stuffed Chicken Breasts x2
  • Eggrolls (made up 58 but then we had them for supper that night so I have 43 left!)
  • twice baked potatoes (did a variation of these on the Holland grill - rubbed the skins with olive oil and sprinkled them with Mrs. Dash Original Blend, turned out absolutely divine!)
  • Best Chocolate Chip Cookies dough (ready to bake 4 dozen)
  • pizza dough
  • 8- 22oz containers Red Sauce ( inspired by Fishmamas' recipe but of course I couldn't leave well enough alone and tweaked it to my own tastes. I will have to share later what I did because it turned out pretty good!)
  • Whole grain cinnamon rolls 1 batch
  • Pumpkin Waffles
  • Light n' Crispy Waffles x2 (although I've noticed these are almost gone already!)
  • Hamburger patties (4lbs)
  • 2 lbs Black Beans
  • 2 lbs Kidney Beans
  • 1 lb Garbanzo Beans
  • 12 cups shredded zucchini and summer squash for breads and muffins (last of the bounty from my garden!)
  • 34 cups of my Homemade Chicken Broth
Granted this has all been done over the past few weeks because I'm not up for marathon cooking/ baking! Now if only my stove will come clean...
    Still in the works:
    • Chicken Enchiladas
    • Cheese Pasties
    • muffins and  more cookie dough
    • refried beans
    • Chili or lasagna?
    • breakfast burritos?

      A new adventure!

      I've been doing some thinking (and dreaming) since I like to lurk about the web that its time to try my hand at this again! My Goals:
      • to not be so intimidated!
      • try to create a system of organization to it
      • be realistic! I will never be perfect.
      • have fun because that is what it's really all about.

      I'm in the process of revamping this site so please bear with me! Any suggestions and tips are helpful.

      Holidays are coming!

      I've joined my first exchange! I am very excited actually and have been racking my brain trying to think of things that we do every year "Tradition-wise". I think I've got it figured out ( I'm not going to give it away just yet....)



      The Holidays are coming fast and I need to work on my project list. My goal: Keep It Simple. This year I'm on a pretty strict budget with the kiddos and I want to do as much homemade gifts as possible. Christmas can be so overwhelming I need to keep the Reason for the Season in focus. I have plenty of inspiration lined up now its a matter of getting it done!

      Happy Birthday Matt!


      Happy 30th my dear! Hope your day was good! We Celebrated with a lovely supper out with our parents and children and then rounded off the evening with Cake. Matt requested Harvey Wallbanger cake which turned out yummy and his mom made his favorite chocolate no-egg crazy cake with white fudge frosting.

      We will definitely have to try the Wallbanger recipe again.

      I'm a little caked out so I requested birthday pie- Matt got me Birthday Brownie with ice cream instead (needed 24 hour notice to order pie) Hmmm. Chocolate is good too.

      Happy Birthday Miles!


      Miles turned eight years old yesterday! He got to take treats to his class and then we got to celebrate, play Uno Attack, and eat yummy cake again! Hard to believe he's eight already!

      WIP.....

      My cleaning goals may have to be suspended because we're going to be expanding our dining area! Matt has been very busy tearing things apart in order to figure out how much work he has to redo!

      The Plan: Remove windows that look into enclosed front porch, header the opening, remove door leading from porch into living room, open wall and add header then add built-in counter/storage with see-through cabinets above. This will be so nice when its done!
